Ingredients

2 tins of artichoke
1/2 cup or peas
1/2 cup of broad beans
Vegan pastry cups (available from supermarket)
2 cloves of garlic
2 tbsp. vegan cream cheese
1 lemon
Baby pea shoots (or micro greens)

Method

Place the artichokes, peas, beans, cream cheese and garlic into a blender and blend until you have a smooth creamy consistency. Season to taste using salt, pepper and lemon or add extra cream cheese to create a creamier consistency.
Using a teaspoon or a piping tube, pipe them neatly into the cups. We chose sweeter tasting cups to create more of an interesting contrast between cup and filling.

Top off with a small sprig of pea shoot or micro greens or a tiny lemon wedge.
