Ingredients

85g white quinoa, uncooked
240ml almond milk or milk of your choice
Zest of 2 oranges
2 tbsp. cocoa powder
2 tbsp. maple syrup

Method

Rinse quinoa in a fine mesh strainer. Heat a small saucepan over medium heat. Once hot, add the quinoa and toast for 3 minutes, stirring frequently, to dry up water and slightly toast. Add almond milk together with orange zest and stir. Bring to a boil over high heat, then reduce heat to low and simmer for 20-25 minutes, uncovered, stirring occasionally.
Once the liquid is absorbed and the quinoa is tender, remove from heat and add cocoa powder and maple syrup. Stir to combine. Tip into serving bowls and top with sliced oranges and dark chocolate shavings.

Cook’s tip

This works best when fresh, however leftovers will keep covered in the fridge for 2-3 days. Reheat in the microwave, or in the small saucepan with additional almond milk to put moisture back in.
