Ingredients

200g dried figs
100g coconut butter
Juice from 1 large lemon
2 tbsp. coconut flour
1 tbsp. lucuma powder
Lemon rind from 1 lemon
100g desiccated coconut
Optional half tsp. ginger

Method

Simply place everything in a blender or food processor until well blended. The mix should have a dough like texture and form. Transfer the mix into a square cake tin and leave to set in the fridge. Cut in to bars. For a quicker option you can also roll the mix into balls. Coat with desiccated coconut.
