Ingredients

1 tsp. smoked paprika
½ celery stalk finely chopped
4 cured mackerel fillets
1 large gherkin
4 tbsp. mayo
1 tsp. English mustard
1 tbsp. dill or parsley
A squeeze of lime juice
Ground black pepper
Toasted Maltese bread to serve

Method

Flake the mackerel off the skin and put it into a bowl Add the gherkins, the mayonnaise, most of the dill or parsley and some black pepper. Add the rest of the ingredients and mix it all up. Taste the tartare and add lime juice and a little more black pepper if you like.

Serve the mackerel tartare with charred broccoli, black rice or lentils, poached egg and toasted Maltese bread
