Sumac is one of my favourite spices and is used liberally throughout Levantine dishes. A small tart berry that is dried and ground it adds a little tang to this summer cocktail.

Ingredients

For the sumac syrup:

200ml water
200g sugar
1 tbsp. Sumac

For the cocktail:

50 ml gin
25 ml sumac syrup
6 blackberries
6 basil leaves
Half a lemon squeezed
Soda water to top up
Plenty of ice

Method

In a shaker, muddle the blackberries, add in the basil and continue to muddle till fragrant. Pour in the gin, lemon juice and sumac syrup. Top with ice and shake until the shaker frosts up. Strain into a tumbler filled with ice and top with soda water. Garnish with a twist of lemon dusted in sumac and a couple of blackberries. No straw needed!
