Ingredients
For the Crème Brûlée
- 350ml cooking cream
- 60g sugar
- 3ml vanilla essence
- 3 egg yolks
For the Cream Mix
- 100g whipping cream, whipped to soft peaks
- 150g crème brûlée
For the Chocolate Sauce
- 30ml cooking cream
- 10ml milk
- 20g milk chocolate
To Serve
- 3 slices brioche loaf
- 250g cream mix
- 50g chocolate sauce
- A pinch of crushed pistachios
- 1 scoop vanilla ice cream
Method
Crème Brûlée
Beat the egg yolks, sugar and vanilla until light and foamy. Bring the cream to the boil in a saucepan, then slowly pour it into the egg mixture, whisking constantly.
Pour into a baking dish and bake in a preheated oven at 120°C for 1 hour. Chill and leave to rest for 2 hours.
Cream Mix
Gently fold the crème brûlée into the whipped cream until smooth.
Chocolate Sauce
Heat the cream and milk until just simmering, then remove from the heat. Add the chocolate and stir until melted and glossy.
For Plating
Caramelise the brioche slices with sugar on all sides until golden. Spread with the cream mix and stack layer by layer.
Top with a scoop of vanilla ice cream, drizzle with warm chocolate sauce and finish with crushed pistachios.
