This recipe comes from the cookbook of my late grandmother, Mary Rose Bonello. Renowned and loved by all as In-Nanna Ta’ Malta, it brings me immense joy to thumb through her own cookbook to share her beloved recipes with the fans she adored.
Ingredients
2 eggs
¾ cup caster sugar
¾ cup self-raising flour OR all-purpose flour sifted with 1 tsp baking powder
1 shot brandy or rum (as per personal preference)
¼ cup walnuts, chopped
1 packet dates, finely chopped
Method
Preheat your oven to 150°C.
Begin by mixing together all your dry ingredients. Add in the eggs and brandy/rum. Mix well together then spread the mixture out evenly into a greased baking tin.
Bake for 10 minutes. Mark out squares in the risen mixture then return to bake until cooked through. Test by pricking with a toothpick – if it comes out clean, you’re done!
The squares will be easy to separate. Allow to cool and store until ready to serve.
