A Dessert recipe, suitable for a Vegetarian dietary by home cook Sam Farrugia

Serves 4

Ingredients

For the zucchini waffles

2 long zucchini
1 tsp baking powder
2 eggs
2 cups buckwheat flour
Salt

For whipped ricotta

1 tub ricotta cheese
┬╝ cup freshly squeeze lemon juice
1 tbsp honey
zest of one lemon

To top

Berries (fresh or frozen)
1 tbsp. honey

Method

For the zucchini waffles

Spiralize zucchini and squeeze out excess water. Mix spiralized zucchini and other ingredients together. Cook in waffle maker for 5 minutes. (These can also be made into pancakes)

For whipped ricotta

Blend all ingredients in food processor till smooth. Fold in lemon zest.
Top zucchini waffles with whipped ricotta, berries and a drizzle of honey.
