Ingredients
For the Caramelised Bacon
- 100g bacon
- 15g sugar
- 10g honey
- A pinch of smoked paprika
- A pinch of black pepper
For the BBQ Mayo Sauce
- 100g mayonnaise
- 30ml barbecue sauce
- 5ml soy sauce
- 10g honey
- ¼ tsp garlic powder
- ½ tsp onion powder
- A pinch of sea salt
- A pinch of black pepper
- A pinch of smoked paprika
For the Mixed Salad
- 10g rocket
- 10g red onion, sliced
- 15g fennel, sliced
- A pinch of sumac
- 5ml olive oil
- A pinch of sea salt
- 3ml lemon juice
To Serve
- 1 slice brioche loaf
- 50g caramelised bacon
- 1 poached egg
- 20g mixed salad
- 30g BBQ mayo sauce
- A pinch of sumac
Method
Caramelised Bacon
Sauté the bacon in a frying pan until lightly golden. Add the sugar and cook until caramelised, then add the honey, smoked paprika and black pepper. Toss until well coated.
BBQ Mayo Sauce
Whisk all the ingredients together until smooth and well combined.
Mixed Salad
Combine all the ingredients in a bowl and toss gently until evenly dressed.
Poached Egg
Bring 200ml water and 40ml white vinegar to a gentle simmer. Crack in the egg and cook for 4 minutes, then transfer to cold water until needed.
For Plating
Toast the brioche in butter on both sides until golden. Spread generously with the BBQ mayo, then top with the caramelised bacon. Add the poached egg and the dressed salad. Finish with a dusting of sumac.
