Ingredients

For the Scrambled Egg

  • 3 eggs
  • A pinch of sea salt
  • A pinch of black pepper
  • ½ tsp Parmesan
  • 10g butter

For the Truffle Garlic Sauce

  • 10ml truffle oil
  • 60g mayonnaise
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp chopped parsley

For the Grilled Sausage

  • 100g sausage, sliced
  • ½ tsp chopped parsley
  • 1 tsp yellow mustard
  • A pinch of smoked paprika
  • 5ml olive oil
  • A pinch of sea salt
  • 5ml lemon juice
  • 1 tsp yellow mustard

To Serve

  • 2 slices sourdough bread
  • 150g scrambled egg
  • 40g grilled sausage
  • 60g truffle garlic sauce
  • A small pinch of fried leeks

Method

Scrambled Egg

Whisk all the ingredients together. Melt the butter in a non-stick frying pan over a low heat, add the eggs and cook gently, folding slowly until soft, fluffy and just set.

Grilled Sausage

Toss all the ingredients together until evenly coated. Grill for 2 minutes on each side until nicely charred and cooked through.

Truffle Garlic Sauce

Whisk all the ingredients together until smooth.

For Plating

Toast the sourdough in butter until golden on both sides. Spread generously with the truffle garlic sauce, fill with the scrambled egg and grilled sausage, then finish with crisp fried leeks.
