Makes 12 Donut Holes

Ingredients

1 ½ cups apple cider vinegar
2 cups all-purpose flour
1 teaspoon cinnamon powder
Pinch of salt
1 teaspoon baking soda
½ teaspoon baking powder
2 tablespoons melted butter / coconut oil
½ cup light brown sugar
½ cup granulated sugar
½ cup almond/oat milk
½ teaspoon vanilla extract

Method

Start by making the apple cider vinegar. In a pan, add the vinegar and leave to simmer on low heat for around 20 minutes. You need to make sure that the vinegar has evaporated and gets reduced to ½ cup. Once its ready set aside for 5 minutes.

In the meantime, Preheat the oven to 180°C. Spray the muffin tin.
Add the flour, cinnamon, salt, baking soda and baking powder in a bowl and whisk. In another bowl, whisk the melted butter, sugars, milk and vanilla. Add in the apple cider vinegar and whisk until smooth. The batter should be quite thick. Using a spoon or a piping bag, add the batter into the muffin tins. Bake for 10 minutes.

Once they’ve cooled slightly, coat the donut holes with some brown sugar and cinnamon.
