Prep time 10mins + 30 mins chilling


150g strawberries, halved
240ml coconut milk
1 tsp. vanilla extract
1-2 tbsp. coconut sugar / 2 Medjool dates
6 tbsp. chia seeds


Blend all ingredients except for chia seeds until very smooth. Spoon chia seeds into a large jar or container with lid, then pour strawberry milk mixture over. Close the jar and shake well to evenly distribute the chia seeds, or simply stir until all chia seeds are well combined throughout the strawberry milk. Place in the fridge and let sit for at least 30 minutes or overnight.

To serve: strawberries and desiccated coconut

Cook’s tip

For a 2-layer version, blend the strawberries separately from the other ingredients to have a chia pudding layer topped with strawberry puree. Will keep for up to one week in the fridge.
