Ingredients

Roasted garlic purée
40 g garlic
1 pinch sea salt
1 pinch black pepper powder
5 ml olive oil
20 ml water

Roasted garlic sauce
20 g roasted garlic purée
15 ml tomato paste
1 pinch dried basil powder
2 pinches sea salt
1 pinch black pepper powder
20 g butter
40 ml cooking cream
15 g parmesan cheese

Shrimp marinade
60 g shrimps
¼ tsp salt
1 pinch black pepper powder
2 ml lemon juice
10 ml olive oil
¼ tsp smoked paprika powder
1 pinch thyme powder

Sautéed cherry tomatoes
3 red cherry tomatoes
¼ tsp salt
1 tsp olive oil
1 pinch Italian seasoning
1 pinch black pepper powder

For assembly
150 g boiled fettuccini pasta
80 g roasted garlic sauce
4 grilled shrimps
2 sautéed cherry tomatoes
1 pinch chopped parsley
2 pinches parmesan cheese

Method

Roasted garlic purée
Place the garlic in a bowl and toss with sea salt, black pepper and olive oil. Roast in a preheated oven at 220°C for 10 minutes until soft and lightly golden. Transfer the roasted garlic to a blender, add the water and blend for about 2 minutes until smooth. Set aside.

Roasted garlic sauce
In a saucepan, melt the butter over medium heat and sauté the tomato paste for 2 minutes. Add the roasted garlic purée, dried basil, sea salt, black pepper, cooking cream and parmesan cheese. Cook over low heat for about 15 minutes, stirring occasionally, until smooth and well combined.

Shrimp marinade and grilling
Combine the shrimps with salt, black pepper, lemon juice, olive oil, smoked paprika and thyme powder in a bowl. Mix well and marinate for 20 minutes. Grill on a preheated griller for about 3 minutes on each side, or until cooked through.

Sautéed cherry tomatoes
Heat the olive oil in a pan, add the cherry tomatoes, salt, Italian seasoning and black pepper, and sauté until lightly cooked and just softened.

Assembly
In a pan, toss the cooked fettuccini with the roasted garlic sauce until evenly coated. Arrange the pasta on a plate and top with the grilled shrimps. Garnish with sautéed cherry tomatoes, chopped parsley and a light sprinkle of parmesan cheese.
