Makes 11

Ingredients

1 cup oats
¾ cup wholemeal flour
1 ½ tsp baking powder
1 tsp ground ginger
¼ tsp cinnamon
1 tsp vanilla extract
2 tbsp coconut oil
1 egg
½ cup maple syrup or honey

Method

1. Mix together the oats, wholemeal flour, baking powder and spices. In a separate bowl, mix together the coconut oil, egg, vanilla extract and maple syrup. Pour the flour mixture in until combined then chill in the fridge for 30 mins.
2. Preheat the oven to 180 degrees and line a baking tray.
3. Scoop cookie dough onto the lined tray and flatten with a fork. Bake for 10 -12 minutes and then leave to cool for 10 minutes.
