Ingredients

2 tablespoons unsalted butter
Salt
1 – 2/3 cup all-purpose flour
2 eggs
3/4 cup light brown sugar
1/2 tsp. vanilla extract
1/2 tsp. baking powder
1/ tsp. baking soda
1/2 cup dark chocolate chunks (can substitute for chocolate chips)
1/2 – 2 cups shredded zucchini (if you don’t like tasting long pieces of zucchini, I suggest cutting them all in half after shredding)
1/4 tsp. coffee granules
1/3 cup cocoa powder

Method

Preheat the oven to 180°C. In a saucepan, melt the butter on low heat then switch off. Add in the sugar and stir until incorporated in the butter. Add the vanilla extract then let cool for at least 5 minutes. Finally add in the eggs and whisk.

In a bowl, add the flour, cocoa powder, baking powder, baking soda, coffee and salt then mix together. Make a hole in the middle and add the wet ingredients and mix further.

Add in the zucchini and chocolate chunks and mix again. DO NOT over mix.
Add the batter into a loaf tin and bake for around 50-60 minutes.

Let cool completely before digging in.
