Ingredients
3 green zucchini
2 cloves of garlic
1 fresh red chili
1 bunch of fresh parsley
500g linguine
Extra virgin olive oil
400g raw peeled prawns
1 lime
Method
Finely grate the zucchini. Peel and finely slice the garlic, then deseed and finely slice the chilies. Pick and roughly chop the parsley.
Put a pot of salted water on to boil for the linguine.
Put the extra olive oil in a large frying pan on a medium heat. Add the zucchini and cook until slightly browned. Add the garlic, chili, and prawns; cook until the prawns are cooked through. Take off the heat and squeeze over the lemon juice.
Drain the pasta once cooked, reserving a little cooking liquid. Add the pasta to the frying pan and toss with the zucchini and prawns. Add some cooking liquid if it looks a little dry, then stirs and add the parsley.
