Ingredients

Avocado spread: 60 g avocado, 15 ml Greek yogurt, 2 ml Dijon mustard, 2 ml lime juice, 1 g cilantro, 1 pinch sea salt, and 1 pinch white pepper powder.

Sesame herb mix: 10 g mixed sesame seeds, toasted and crushed, 40 ml olive oil, 3 g chilli flakes, 1 tsp smoked paprika powder, ¼ tsp sea salt, 1/8 tsp black pepper, and 10 g chopped parsley.

Roasted corn ribs: 1 sweet corn, 5 ml olive oil, ¼ tsp sea salt, 1/8 tsp black pepper powder, and ¼ tsp dried oregano.

For assembly: 8 pcs roasted corn ribs, 60 ml avocado spread, 30 g sesame herb mix, 1 pinch sumac powder, and 1 pinch chopped dill leaves.

Method

For the avocado spread, place all the ingredients in a blender and blend for 1 minute until smooth. Set aside.

For the sesame herb mix, combine all the ingredients in a mixing bowl and stir well until evenly mixed. Set aside.

For the roasted corn ribs, cut the corn into 8 ribs. Toss with olive oil, sea salt, black pepper, and dried oregano. Roast in a preheated oven at 200°C for 10 minutes until lightly charred.

For assembly, spread the avocado spread on a plate. Arrange the roasted corn ribs on top, drizzle with the sesame herb mix, and garnish with sumac powder and chopped dill leaves.
